Carrot Beet Cake

  • 2 cups grated Carrots
  • 1 cup grated Beets
  • 3 cups Spelt Flour
  • 1 tsp. Salt
  • 2 tsp. Cinnamon
  • 2 tsp. Baking Soda
  • 4 eggs
  • 1 ½ cups Oil
  • 2 cups Cane Sugar (Or sweetener)
  • 1 tsp. Vanilla

Icing

  • ½ cups Butter
  • 2 tsp. Vanilla
  • 8 oz Cream Cheese (or Soy Cream Cheese)
  • 1 lb. Icing Sugar

Beat eggs, oil, sugar, eggs and vanilla. Blend in dry ingredients and vegetables. Bake on cookie sheet and 325 F for 30 to 40 minutes. Icing: Beat ingredients. Spread on cookie sheet and sprinkle with nuts
