Corny Banana Oat Bread

Ingredients:

  • 1/2 cup honey or rice syrup (125 mL)
  • 1/2 cup sunflower oil or melted butter (125 mL)
  • 2 eggs, beaten
  • 1 cup mashed ripe bananas (2 or 3 medium) (250 1nL)
  • 1 tsp. pure vanilla (5 mL)
  • 1 cup whole-wheat flour (250 mL)
  • 1/2 cup rolled oats (125 mL)
  • 1/4 cup cornmeal (60 mL)
  • 1/4 cup wheat germ (60 mL)
  • l tsp. aluminum-free baking soda (5 mL)
  • 1/4 tsp. sea salt (l mL) (optional)

Preparation:

  • Combine all wet ingredients together in a measuring cup. Beat eggs with a whisk, then add the wet ingredients to the eggs.
  • Combine all dry ingredients, then add to the mixture, alternating with the bananas so that the final product is well mixed.
  • Preheat oven to 350°F (l8O°C). Lightly oil muffin tins or use paper molds, or 9"x 5"x3" (23 cm X 13 cm X 8 cm) loaf pan, and fill with the batter.
  • Bake for 45 minutes to l hour, until a knife comes out clean and tops are browned.
  • You can replace the whole-wheat flour with oat flour or other flour of your choice, however the loaf may become a little bit dryer.

I do agree with all the ideas you've introduced to your post. They are rellay convincing and can certainly work. Still, the posts are too quick for beginners. Could you please lengthen them a little from next time? Thanks for the post.
