Hot Apple Cobbler With A Crunch

Ingredients:

2 large red Delicious apples

Juice of 1/2 lemon

l/8 tsp. ground cinnamon (1 mL)

1 tsp. honey (5 mL)

Pinch of barley malt sweetener

l tbsp. unsalted butter, melted (15 mL)

1/2 cup PEP’s Granola (125 mL)

Preparation:

  • Preheat the oven to 350°F (180°C). Peel and quarter the apples, cut out the seeds and core, then cut into 1/4" (l cm) wedges.
  • In a bowl, sprinkle the apples with the lemon juice, add all the remaining ingredients except the granola, and toss to mix.
  • Divide the apples among 4 small individual baking dishes, or spread in a shallow 2-cup (500 mL) baking dish, and bake for 7 to 9 minutes.
  •  Sprinkle 2 tablespoons (30 mL) of granola over each cobbler and retum to the oven for 3 minutes more.

Serve piping hot to 4 anxiously awaiting people.
