Millet Pudding

Ingredients:

  • 2/3 cup raw millet (170 mL)
  • 4 cups pure water (1000 mL)
  • 1/4 tsp. sea salt (1 mL)
  • 1 cup almonds (250 mL)
  • 4 tbsp. honey (or less for the calorie-conscious) (60 mL)
  • 1 tsp. pure vanilla (5 mL)
  • 1/2 tbsp. fresh lemon juice (8 mL)
  • 1/2 cup fresh or dried coconut or raisins (125 mL)

Preparation:

  • Bring the water, salt and millet to a boil.
  • Pour off the water into a blender, and make it into a nut milk by grinding 1 cup (250 mL) raw almonds or cashews with it; blend at high speed.
  • Add the honey, vanilla and lemon juice and blend again.
  • Pour this mixture over the millet in a casserole dish. Add the coconut or raisins and mix thoroughly.
  • Cover and bake at 350°F (180°C) for 1 hour stirring occasionally during baking.

Serve warm or cold to 6 people. Top it with almond milk for a special treat.
