Oatmeal Chocolate Chip Cookies

- 2 cups of large flake oats
- ¾ cups of spelt flour or whole-wheat flour
- ¼ cups of ground flaxseed
- 2 tsp. Cinnamon
- 1 tsp. Baking Soda
- ½ tsp. Baking Powder
- ¼ tsp. Salt
- ½ cups of Non-hydrogenated Margarine
- ½ cups Agave Nectar
- 1 Egg (whole)
- 3 tbsp. Tahini
- 2 tsp. Vanilla
- 2 oz chopped Chocolate (70% Cocoa). Recommend: Lindt 70% Dark.
Preheat oven to 350 F. Mix dry ingredients together in a bowl. In another bowl, mix wet ingredients and combine with dry ingredients. Bake on parchment (wax paper) placed on cookie sheets for 10 – 12 minutes.
