Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed (250 mL)
  • 1-3/4 cups pure water (435 mL)
  • 1/2 cup finely diced English cucumber (125 mL)
  • 4 stems finely diced green onion
  • 1/4 cup finely diced fresh cilantro (60 mL)
  • 1/3 cup corn kemels (85 mL)
  • 3 tbsp. fresh lime juice (45 mL)
  • 2 tbsp. sesame oil (30 mL)
  • 2 tbsp. flax seed oil (30 mL)
  • Sea salt and pepper to taste
  • 1 tsp. rice syrup or honey (5 mL) (optional)

Preparation:

  1. Bring water to a boil in a l quart (1 L) pot, then add quinoa. Reduce heat and simmer covered for 15 minutes, stirring occasionally until grain is tender.
  2. Remove from heat and let cool uncovered.
  3. Toss cucumber, green onion, cilantro and corn kernels with cooked quinoa.
  4. Combine the lime juice, oils, salt, pepper and honey, then add it to the quinoa.
  5. Stir thoroughly with a fork to coat the grains and vegetables.

Serves 4
