Spinach Pesto Sauce

Ingredients:

  • 1 bunch fresh spinach, trimmed and washed
  • 4 garlic cloves, minced
  • Sea salt and ground pepper to taste (optional)
  • 1/2 cup flax seed oil or olive oil (125 mL)
  • 2 tbsp. pine nuts (30 mL)
  • 4 tbsp. parmesan cheese (60 mL) (optional)

Preparation:

  • Place the spinach, garlic, pine nuts, salt and pepper in a food processor and gradually add the oil in a thin stream through the feed tube and blend until the sauce is the consistency of thin mayonnaise.
  • Add the parmesan cheese if desired and blend until well mixed.
  • If you freeze this sauce, do not add the cheese until you are ready to use it.
  • Freeze in small portions for single or double servings.
