Ingredients:
- 1 bunch fresh spinach, trimmed and washed
- 4 garlic cloves, minced
- Sea salt and ground pepper to taste (optional)
- 1/2 cup flax seed oil or olive oil (125 mL)
- 2 tbsp. pine nuts (30 mL)
- 4 tbsp. parmesan cheese (60 mL) (optional)
Preparation:
- Place the spinach, garlic, pine nuts, salt and pepper in a food processor and gradually add the oil in a thin stream through the feed tube and blend until the sauce is the consistency of thin mayonnaise.
- Add the parmesan cheese if desired and blend until well mixed.
- If you freeze this sauce, do not add the cheese until you are ready to use it.
- Freeze in small portions for single or double servings.
