Beetroot Rice

Ingredients:

  • 2 onions, chopped
  • 2 tbsp. sesame (30 mL)
  • 1 tsp. mustard seeds (5 mL)
  • 1 tsp. freshly ground black pepper or cayenne (5 mL)
  • 1/2 tsp. cumin (2 mL)
  • 1/2 tsp. turmeric (2 mL)
  • 1 large beet, cooked and then diced
  • 1/2 tsp. sea salt (2 mL)
  • 3 cups cooked brown rice (750 mL)
  • juice of l lemon
  • 10 fresh cashew nuts, chopped

Preparation:

  • Fry the onions in the oil over medium heat, or saute them in a little water.
  • Add spices and cook gently for a few minutes.
  • Add the beet and salt, then mix well with rice.
  • Sprinkle with lemon juice, garnish with fresh cashew nuts and serve hot.

Serves 6
