Ingredients:
- 2 onions, chopped
- 2 tbsp. sesame (30 mL)
- 1 tsp. mustard seeds (5 mL)
- 1 tsp. freshly ground black pepper or cayenne (5 mL)
- 1/2 tsp. cumin (2 mL)
- 1/2 tsp. turmeric (2 mL)
- 1 large beet, cooked and then diced
- 1/2 tsp. sea salt (2 mL)
- 3 cups cooked brown rice (750 mL)
- juice of l lemon
- 10 fresh cashew nuts, chopped
Preparation:
- Fry the onions in the oil over medium heat, or saute them in a little water.
- Add spices and cook gently for a few minutes.
- Add the beet and salt, then mix well with rice.
- Sprinkle with lemon juice, garnish with fresh cashew nuts and serve hot.
Serves 6
