Ingredients:
- 1/3 cup minced fresh dill (85 mL)
- 1/4 cup cider vinegar or lemon juice (60 mL)
- 1-1/2 tbsp. Dijon mustard (25 mL)
- 1/2 tsp. honey or rice syrup (2 mL)
- 1/2 cup flax seed oil (125 mL)
- 1/2 cup sunflower oil (125 mL)
Preparation:
- In a bowl or blender, mix dill, vinegar and seasonings. Trickle the oil in slowly while blending or whisking vigorously, until the dressing is thick and smooth.
- Keep extra dressing refrigerated in a dark bottle for use later.
Makes enough for 4 to 6 salads
