Normandy French Beans

Ingredients:

  • 1 lb. green or yellow beans, sliced into thin strips (450 gr.)
  • 1 tbsp. sesame oil (15 mL)
  • 1 medium onion, thinly sliced into rings
  • 2 apples, peeled, cored, and coarsely chopped
  • 1/3 cup sliced almonds, plain or toasted (85 mL)

Preparation:

  • Steam the beans until just tender, drain and set aside.
  • Saute the onions in a little bit of water and sesame oil, until soft, then add the chopped apples.
  • Cook, stirring occasionally, until the apples are tender but still firm.
  • Stir in the beans and almonds, and cook until the beans are heated through.
  • Serve immediately.

Serves 6 to 8
